What BTU actually measures
BTU per hour measures the maximum rate of heat energy a burner can produce, not how efficiently that heat is used or how hot the actual cooking surface gets in practice.

Why higher BTU isn't automatically better
A grill with a high BTU rating but poor heat retention or a large uninsulated cooking area can perform worse than a lower-BTU grill that manages heat more efficiently — BTU is one input among several, not a complete performance measure.

BTU per square inch is a more useful comparison
Dividing total BTU by cooking area gives a rough sense of heat density, which is a more meaningful comparison between grills of different sizes than raw BTU numbers alone.
