Warmth when damp: merino wins
A face covering gets damp from breath within minutes in cold weather. Merino continues insulating when damp and does not feel clammy against skin. Synthetic loses less warmth than cotton but feels cooler; fleece becomes noticeably unpleasant once wet.

Breathability while working: synthetic wins
Lightweight polyester passes air and moisture vapour best, which matters when the gaiter is over your mouth on a climb. Fleece restricts airflow noticeably and merino sits between the two.

Odour resistance: merino, decisively
Merino's structure resists the bacteria that produce odour. On a multi-day trip a synthetic gaiter worn over the face becomes unpleasant by day two or three; merino does not. This is the single strongest argument for paying $40 rather than $25.

Durability and cost: synthetic wins
Polyester resists abrasion better and costs less. Merino wears thin where it rubs, particularly under a pack strap or against a zipper, and it is the material most likely to develop holes within a season of hard use.

Sun protection: synthetic, by design
UPF-rated synthetics are made for this and block a stated share of UV. Merino provides some protection by weave density rather than by rating, and fleece is too warm to wear in the conditions where sun protection matters.
